Easy Breezy Summer Recipes

Happy Thursday Loves!

Today I thought it would be fun to share two of my go-to recipes for Summer. These two treats could not be any easier or more delish on a hot day!

{Easy No Bake Lemon Cheesecake}


What you need:
1 block of cream cheese, softened
1/4 cup o'sugar
1 tub of cool whip
1 lemon grated, and 2 teaspoons of juice reserved.
1 teaspoon of vanilla
pre-made graham cracker crust


What you will do:
blend sugar, cream cheese and lemon with a mixed
dump the Cool Whip and vanilla into the bowl and blend well
scoop in to pie crust
refrigerate for at least 2 hours, or until firm
serve and devour



{Greek Chickpea Salad}


What you need: 
2 cans of chickpeas, drained
1 whole lemon
1 cup of olives 
1 cup cherry tomatoes
1 cup feta cheese
1 cup chopped cucumber
3 tablespoons of olive oil - maybe more, maybe less (your call)
salt and pepper to taste


What you will do:
chop up everything 
dump it into a bowl
grate lemon rind
cute lemon in half and squeeze both halves in to the bowl
add salt, pepper and olive oil
mix well
and voila, it's complete! 


We love to eat it with grilled shrimp! Delish!!

  2. Yummy recipes! Though I'm not a fan of lemon, I'm sure I could revamp this recipe to suit my taste buds! Hope you have a happy Thursday and happy almost weekend!
